Red velvet cupcakes

Indulging in some red velvet cupcakes smothered with butter cream frosting that I made - surprisingly, they didn't taste horrible for my first time baking from scratch! Been tempted to try new things lately (or ever since the new year began) and baking from scratch was definitely on the list. My attempt to make chocolate chip oatmeal cookies last night didn't turn out the way I hoped for it to and I'm too ashamed to even reveal any photos of them. Tossed all four batches into the garbage can after tasting them - what a shame. The bf said it didn't taste all that bad, but I didn't want another bite into those cookies.

As for the ingredients to make red velvet cupcakes, you will need:
A large bowl for mixing
An electric beater/ whisk
Muffin pan
Cupcake liners
2 and a half cup of all-purpose flour
1 and a half cup of sugar
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon of cocoa powder
1 and a half cup of vegetable oil
1 cup of buttermilk
2 large eggs
1 ounce of red food colouring (or more if you wish)
1 teaspoon of vanilla extra

Preheat oven to 350 degrees F and mix ingredients together into a large bowl. Place cupcake liners into the muffin pan and pour mix into the liners. The cupcakes should be ready within 25-30 minutes and you can indulge your sweet tooth! Oh, and the frosting - I just purchased Betty Crocker's Butter Cream frosting.

Wish the red velvet cupcakes were more red for the first batch but I didn't add enough food colouring so some of the photos may not appear to look as if they are red velvet cupcakes, ah wells.
